# How-To Steps:
01 - In a large mixing bowl, combine grated carrots, crushed biscuits, chopped nuts, softened cream cheese, sugar, vanilla extract, cinnamon, nutmeg, and salt. Mix thoroughly until a sticky dough forms.
02 - Scoop tablespoon-sized portions of the mixture and roll between your palms into uniform balls. Arrange on a parchment-lined baking tray.
03 - Place the tray in the refrigerator for at least 1 hour until the truffle centers are completely firm.
04 - Set a heatproof bowl over a pan of simmering water. Add chopped white chocolate and melt, stirring constantly until smooth. Remove from heat and whisk in softened cream cheese and butter until the coating becomes smooth and glossy.
